Gordon Ramsay’s Secret Ingredient For Steak Is One We Wish We’d Known Before

Chefs often consider tenderloin or filet mignon to be overrated cuts of steak, but Gordon Ramsay disagrees. The filet, or filet mignon, is one of his "favorite cuts of all time" because it is "packed with flavor" (per YouTube). Due to its leanness, it's a cut that can easily overcook and become dry, which is why it's one of the worst cuts of steak to grill. But Ramsay uses an unexpected ingredient to keep it juicy: chicken stock.First, the chef sears both sides of his meat in a skillet -- laying the meat away from you rather than towards you is Ramsay's tip for not burning yourself when making steak. Then he adds garlic, rosemary, thyme, and a bay leaf before pouring in the stock. Adding the extra liquid means more moist meat since some of it is absorbed by the […]

District 5 candidates on how they will speed up housing

Here’s the latest in our “Meet the Candidates” series for District 5, in which we ask each candidate to answer one question per week leading up to the election. Four candidates are challenging incumbent Supervisor Dean Preston to represent District 5, which spans from the east end of Golden Gate Park through Haight-Ashbury, Japantown and the Western Addition, the Lower Haight and Hayes Valley, and most of the Tenderloin.San Francisco has a new mandate from the state of California to build 82,000 new homes by 2031, with more than half of those to be affordable to low- and moderate-income households. We’re not on track to meet this goal, and one of the big arguments in San Francisco’s housing debate — particularly as campaigning heats up in District 5 — has been over who is to blame for our slow housing […]

Hong Kong sees biggest uptick in cryptocurrency activity in East Asia, new report finds

Hong Kong has seen the biggest uptick in cryptocurrency activity in East Asia amid the city's efforts to become a virtual-asset hub, according to new research, while mainland Chinese use digital currencies to preserve wealth in spite of the government's draconian ban.The city rose to 30th place, up from the No 47 spot last year, in this year's Global Cryptocurrency Adoption Index rankings published on Wednesday by research firm Chainalysis. It said Hong Kong saw an 85.6 per cent year-on-year surge in cryptocurrency transaction value, the largest growth seen in East Asia.Hong Kong regulators' acceptance of cryptocurrencies and "decisiveness" in laying down a regulatory framework helped build up institutional adoption, according to Chainalysis. SFUSD’s delay in announcing public school closures is a disgrace

Many years ago, the comedian George Wallace ridiculed the notion of the U.S. military developing a faster bomber. Was this, he asked, a problem? Have the many people the United States has bombed been waiting outside and asking “When’s that bomber going to get here?” In related news, the San Francisco Unified School District was, tomorrow, supposed to release its preliminary list of schools that will be closed and/or merged — the moment of truth in a nine-month ordeal. Mission Local has learned that, on Friday, the district realized it would have to delay this announcement. A planned Monday statement from superintendent Matt Wayne instead dropped over the weekend when the news of the delay got out and questions were being asked. And now public school parents are more irate, not less. When’s that bomber going to get here? No need to mince words: […]

Mayor Breed is deleting texts. Legal experts say that’s a problem.

On June 29, Mayor London Breed texted Carla Short, the director of San Francisco Public Works, asking her to send out a crew to pick up trash in the Tenderloin.“I’m at Azalina’s. Are you around? You should stop by,” read the text from Breed, sent at 5:54 p.m. while the mayor was at a Malaysian restaurant near Ellis and Leavenworth streets. “Can you send someone to clean up across the street please. It [sic] a pile of trash on the south west corner.”Short said she was at a Giants game but promised to “send someone now.” “That would be great,” Breed wrote in response. “I want her to succeed but the tents and trash are a problem,” she added, seemingly referencing a homeless woman on the corner. “We will deal with the tents. Thank you and enjoy the game.” That simple […]

The corner of Mission and 22nd has been sealed off and firefighters have ascended a ladder to remove a Wells Fargo sign overlooking the intersection, which came loose during a gusty day. Earlier in the evening, pedestrians were asked to avoid the vicinity in the event the large red-and-yellow bank sign fell. Building representatives were also on scene, and the fire department said it was opening to securing or removing the sign. They chose the latter, with the property owner’s permission. “This is an isolated hazard and we ask that you avoid the area,” the fire department added in a statement, advising travelers to plan alternative routes.  Want the latest on the Mission and San Francisco? United Dumplings: A Bernal Heights delight

The original United Dumplings has been on Cortland in Bernal since late 2020, but my first time trying their food was just last year at their Oakland location. Women-owned, United Dumplings offers a mix of tradition and innovation, and it all tastes authentically great. I was blown away by the quality of the dumplings and the variety of offerings — of not just dumplings but the myriad noodles, rice, veggie, and tofu options. I was overjoyed to learn (very belatedly) that we had one so close to the Mission. The original is a bit more casual and spare than its East Bay cousin, but the menus seem to be identical. (There’s also another outpost in the Marina.)Pea shoots I tried in Oakland were a favorite, so I had to have them here.Pea ShootsThey were so abundantly garlicky, and so lusciously creamy, they almost seemed […]
